Low Sodium One-Pot Lemon Herb Chicken & Rice

So super simple! And time efficient. AND DELICIOUS! Talk about flavor. We loved it. The original recipe is posted here. My husband thinks it could use a little more seasonings. (Not salt) It was just very lemony, but not really anything else to the palate. So next time I will add more seasonings. Otherwise, it was fantastic. I suggest going with brown rice to be healthier. I'm just trying to finish off all the white rice we had on hand. Enjoy! (It is 4 servings, so I doubled it for our family of 6.)

Low Sodium One-Pot Lemon Herb Chicken and Rice

4 boneless chicken breasts
2 tablespoons butter
2 teaspoons Italian seasonings

For rice:
1 cup uncooked rice (brown is healthier)
2 1/4 cups low sodium chicken broth
juice of 1 lemon (I used about a 1/4 cup of bottled lemon juice initially - very lemony!)
1 teaspoon Italian seasoning

  1. Melt butter over medium heat in a large skillet or pan (one that has a lid). Season chicken with  Italian seasoning. Brown chicken in the butter for 1-2 minutes on each side. (Chicken shouldn't be cooked through at this point.) Transfer chicken to a plate.
  2. Add rice, chicken broth, lemon juice and remaining Italian seasoning to the pan (no need to clean it first). Place chicken on top, then cover and simmer over medium-low heat for 20-25 minutes until liquid is dissolved.
  3. Garnish with fresh parsley or cilantro if desired and lemon wedges for squeezing. Serve immediately.
