5 Pinterest Recipes We Are Loving Right Now

To get our budget truly in line with where we need it to be, I've been doubling my efforts to plan out our meals. I use as much as we need only and sometimes combine leftovers if possible to create another dish. Pinterest has been my go-to for help in this. We get tired of the normal recipes, that while they may be favorites, you can only have them so many times within a couple weeks. So here are our favorites from this past week that we have decided are worth sharing and keeping in our planning list. 




This is my absolute favorite. So simple, yet so delicious. My husband agreed that the both of us would definitely be okay with eating this once a week. Sadly, the kids were not as thrilled. Instead of using plain white rice, we found these Veetee Thai Lime and Herb rice dishes at our local HEB.
They are just under $2 each. It has about 2 servings each. We love the way the cilantro and lime flavors enhances the taste of the beef. We also make chicken potstickers with this meal (mostly because we love those so much too!).


The kids were not a huge fan of this one either. Yes, I have super picky eaters. However, they at least ate one and my husband said they were a keeper. Super simple, they don't take long to make. I like to get pre-made meatballs from HEB. I will NEVER AGAIN buy the brand that Walmart had. There is something seriously wrong with these meatballs. 
My kids love meatballs, but they wouldn't touch these after one bite. Weird taste to them. I tried marinating them and everything... Anyhow! Back to the recipe. Heat up your meatballs and sauce, then top your hoagies and add mozzarella. Once the cheese is melted -voila! Dinner is served. 



Another really simple dish that doesn't take too much effort. This one worked for the whole family. I had maybe 3 servings left which I decided to freeze for later use. I made garlic breadsticks to go with it and Mmmm we all ate good! 

I have used these in the form suggested, but you can use the filling as a dip too with tortilla chips. The kids say its too spicy for them, so my husband and I use these for a light lunch, snack or as the dip side for a party or lunch. 

5.Chicken Bacon Ranch Casserole
We had this one most recently. My kids were having seconds and thirds. They asked if we can make it every day for 14 days. Why 14 days? I have no idea. Guess it was just the number that popped into their heads. So creamy and delicious! I had absolutely no leftovers from my 9x9 baking dish! And the craziest part? I didn't even have the bacon for it! They asked that we include that next time though.

  1. I too am getting my budget under control. I have a binder for the money budgeting and a menu binder for to keep up with the food stuff. I saw a video today on youtube from DOITONADIME. She had some great freezer meals and how to store them so you can get them out and through them in the crock pot. I put recipes in my binder along with tips I have found that work. I also write up a t least @0 to 30 foods we eat in list form to keep in there. I have a pocket section to put recipes that look like something we may like. Then I can try it. If they are not liked, they go. If we like it, it goes in a see through pouch so it can be made again. I have another calendar that I keep in the kitchen where I can see it everyday. It has a different dinner for each day. I got my list of menus ideas out to give me ideas. As I write in the food, I make a grocery list as I go of what we will need. This is keeping me out of the grocery store. And there saving me cash. Hint- make sure you alot for a leftover day. I forgot to do this. We try to do a few meatless dinner nights. Oh and as for the rice you buy, you spent around $7 for roughly 8 cups of rice. I buy a 5 lb bag of the Jasmine rice (little more expensive but such a good flavor) for $5. It helps to have a rice cooker and you can add flavors cheaper than buying premade. Remember that doing this takes time. Each month you learn things and also every family is different and has to do what works for them.

  2. I actually popped off to pin that delicious looking Chicken bacon Ranch casserole Emily. My kids love their pasta so as soon as I find a good recipe, especially if it's been okay by other kids, I'm all for trying it out

  5. I like to prepare meals as well and plan them ahead of time, at the beginning of each week. I like that you have chosen different types of dishes to try out, from different cuisines like Korean, Italian or American.

  7. Oh the Korean beef bowl sounds simply awesome! It sounds like your children are getting to experience all types of new foods, that's awesome! And even better that they are willing to try things. I always say you can't know if you like it or not until you at least try it. I'm saving the buffalo chicken tortilla's for sure!

  8. i am vegetarian but i really love the rice option more natural and more easy for me because i never cook i had a really amazing husband he does everityng in the home :D nice post

  13. I used to be really good at pre-planning meals. It's something I need to get back in the habit of doing. I hate letting food go to waste & use leftovers as much as possible. The meatball subs & cheesy spaghetti look yummy!
