First I want to point out a few things you should know about natural peanut butter. If you are a die-hard fan of a name brand like Skippy or Jif, you probably won't like it. It's not the same consistancy for starters. When you open a jar of natural peanut butter, you need to keep it upright. Stir it up really good making sure to mix up whats on the bottom too. I especially love having this kind of butter with my moms home made strawberry jam. It's not overly sweet. I've tried one other natural peanut butter before. It was awful. Left a really bad after-taste and ended with me throwing it out. These butters don't have an after-taste. They are smooth and have a great natural taste. None of those chemicals, hydrogenated fats, filler, or loads of salt and sugar. It's been promoted by the South Beach Diet - so you know its great for those looking to lose weight. 4 Ingredients Flourless Peanut Butter Cookies
Makes 15 cookies
1 large egg, lightly beaten
1 teaspoon vanilla extract
Using a hand or stand mixer, mix the peanut butter, sugar, egg and vanilla on low speed until well combined.
Using a medium cookie scoop, scoop about 1 1/2 tablespoons of dough 1 1/2-inches apart onto the baking sheet. If you don’t have a cookie scoop, drop the dough with a spoon.
Flatten the dough balls the tines of a fork, making a cross pattern on the cookies.
Bake the cookies for 10-12 minutes until they are golden around the edges. Allow the cookies to rest on the counter for 2 minutes before transferring them to a cooling rack.
