2 More Places to Enjoy in Midland

I convinced my husband and sister-in-law on an outing this weekend. The kids are off in Florida with my family. So why not? We stopped at two other places that were on my list to check out. 

First off, we have a beautiful antique store called The Rustic Windmill. It is located at 2032 W Cuthbert Ave. Not everything inside is an antique or vintage. Some of it is inspired! Which made everything interesting. You could find bundles of Pokemon cards up front, milk glass, vintage photos and postcards, dolls and so much more.
On this visit, we found 6 boxes of RIT dye in a bag for $2 as well as a bag of NASA themed patches for my husbands future jacket for $6.99. 

My take away on this one

This place is so much fun! There is plenty to find. We saw a great amount of unique items as well as older ones that aren't so easy to come across. I would gladly stop by this shop every once in a while to see what new things they might have to offer.  

Time for lunch!

We decided to go out for lunch and wanted to try some Italian. That is where we landed Ray's Italian Bistro. Besides Olive Garden, it was the only listing for Italian that was open for lunch. The outside is unassuming with it being part of a strip mall. Inside was cool, inviting and giving off an authentic Italian vibe. The menu had so many different options to cover all bases.

We had the mozzarella sticks appetizer with the fresh bread rolls they serve. I thought the vinaigrette dipping sauce was a good one. It was like a mix between balsamic and Italian. The cheese sticks had a thicker breading, were so fresh that they were hot to the last bite and came with a thinner marinara sauce.
For the food, I chose the fettuccine primavera with fresh veggies. I was sad to realize that meant a lot of "sharp" olives (as my sister-in-law called them), as well as mushrooms. I'm not a fan of either. I did enjoy the artichoke hearts, bell peppers, squash, and onions. My sister-in-law got the spinach ravioli, which looked amazing. I dipped a piece of the bread into the sauce. It was creamy and so cheesy! I loved it. My husband ordered the large (16") meat lovers pizza. He said he was craving pizza and it would give us some to take home for dinner.

The food was amazing! The atmosphere was calm and relaxing. I loved how they packed away our leftovers for us. The servers are highly attentive and so friendly. You have a homey feeling while dining. Almost one of family. 

The drawback for us would be the prices. A single plate was averaging about $14. While this is decent for the amount of food and the quality, it means that eating here (for us at least) is more for date night and special occasions.

Is Hello Fresh Really Worth Getting?

I love participating in sampling new products. Every once in a while though, we come across something that I shake my head and pass on. The most recent product came in my PINCHme box. They are pushing the Hello Fresh option. While I'm all for saving money on feeding my crew, or finding simpler recipes that are fully put together and don't require me to go shopping, I am not seeing the benefit for our family of 6 on this one. 

What is Hello Fresh? 

It is an automated payment system where you are subscribing to a weekly delivery of boxes containing food. Each meal is planned out for the amount of people included.

Here is what we have learned....

So the first thing we had to figure out were the prices and overall payment for the amount of time the deal was for. The one I was sent was for 6 weeks. In that 6 weeks, it would include meals for 4 people (problem #1 for us, since we have 6 family members). There would be 3 meals per week for those 4 people. So that is 12 meals. And over the 6 week period that leads us to 72 meals. First part of the math is done. 

Now the pricing fun. 

You really have to pay attention here. When they say you are getting a bunch of free meals, in my case - 17 free meals, they break it up. Here is the break down for you according the fine print on the card they sent me....

First week is half off with free shipping.

Week 2 is 35% off plus $9.99 for shipping. 

Week 3 is 20% off plus $9.99 for shipping.

Week 4 and 5 is 14% off plus $9.99 for shipping each week.

Week 6 is only 5% off plus $9.99 for shipping. 

That comes out to a total of $516. 47! For a total of 72 meals. With then translates to $7.17 per meal. Not bad if you are going by price per meal I suppose. Cheaper than eating out. However, for a family of 6, it is not even an option on their website. You can only choose 2 or 4 person plans. 

Any benefits? 

Not for us. But I suppose I would have to concede that if you are a couple who have busy schedules, or are open to multiple options and not just going by a meat and veggie option, then maybe you could make that work? Prices in the grocery stores have been a tremendous burden for a good deal of people. My own family is eating a lot of sandwiches and ramen lately. At the same time, we did the math. Roughly $200 allows me to make those 72 meals. They may not be fancy meals, but they fill my teenage boys. Depending on what the serving sizes look like, my giant sons probably wouldn't fill up on them.

The Best Sausage Comes From Waco!

I love sausage, but I'm picky about which kinds. There are name brands that I won't touch. Texture, flavor (or lack of) and I can't stand sausage having bits of 'hardness' or tendon-like pieces in it. Once, I even had a chip of bone in sausage. It only takes once to ruin me on a brand. My husband is totally opposite of me. He could live without sausage and be just as happy. He and some of his family have never been into eating sausage unless others make it. My children will eat it cooked in things like a casserole or pasta dish. They will also eat the brats that I bake in bbq sauce. 

Through my whole life, I have never found that perfect sausage. Not until now, that is. 

Farmers Market for the win!

We love going to the Farmers Market here in Waco. They meet on Saturdays. Vendors of all types will be there. You can get handmade soaps, peanut butters and treats, special blend coffees and teas, produce and even fresh made meats - just to name a few. My husband and I have GERD, among other things. So we have had to stop eating certain foods. Ground beef was one of those. Until we tried eating fresh made ground beef. We haven't had a single issue since! No abdominal cramping, no torso pains just under the ribs, none of that reflux problem. It is amazing! The meat is straight up meat. Not a bunch of fat and sinew shredded in to add pounds. No artificial dyes added to make it look fresher, longer. When I fry it up for shepherds pie, there isn't a cup full of grease left over. Actually, I had to add broth so that it wouldn't be too dry! This is what we have been missing. 

What about the sausage??

But I wanted to tell you guys about sausage. After seeing the lack of problems with beef, we were curious to try other things. Sausage was something I wondered about. I thought they were mostly the same. Flavors are set, right? No! We found a great group of guys who had pushed the boundaries on what could be done with sausage. 

Sir Sausage & Sons had a booth there. They let you taste the flavors they offered. They had beef sticks, summer sausages and then the sausages you would cook in meals. They had flavors that I would never have imagined  possible. Our initial favorite? Daybreak Breakfast Sausage. This is breakfast in a sausage. I kid you not, it has eggs, sweet peppers, cheddar, and bacon.Add a tortilla wrap to it and voila - a full breakfast! Normally, cheddar cheese tears me up. No gallbladder means I can't handle fatty foods. I ate this for dinner with my husband and not a single cramp! It was amazing. So much flavor. We are done with store bought sausage. It can't hold a candle to this. 

We also got the One Street Taco Summer Sausage. This one has everything you might want in a street taco, but in a sausage link instead! Fajita seasonings, salsa, cilantro, charred corn, pepper Jack cheese, and cheddar. It is a party I don't want to leave. 

Totally hooked now! 

My husband and I have come to the decision to adjust our budget to include orders from them. After all, they include free delivery! I messaged them when their website was down. I'm happy to report they have excellent customer service. They answered my questions, offered suggestions and set up my order. The next day, they delivered! No additional taxes and fees. They have other flavors we want to try out next. We served the Fajita flavored ones at a family dinner. My husband wasn't as much a fan of this one because of the courser texture it had. 

Suddenly, my husband wants sausage. And I'm happy for it. We are hooked now. If you are looking for unique flavors and sausage that is packed with taste, I highly suggest you check them out. They are the people to go to for sausage in Waco!

FunBites Make Every Bite Fun!

Have you ever noticed that there are some kids who just refuse to eat something if it does not look appealing to them? Doesn't matter what it tastes like, because it is all about presentation. Food often needs to be beautiful for children. Food needs to be fun. Otherwise they turn up their noses and cringe in their seats. FunBites is here to rescue meals!

I've been through the stages with my kids. Those days of making sandwiches for the kids, but having them beg me to cut it up into halves or triangles. Does it change the sandwich? No. But as soon as I do as they ask, they devour it without hesitation. Why? Kids taste is often initiated by their eyes. If it looks appealing, they are more likely to enjoy it. I actually think a lot of their judgement starts with the eyes. 

But that is not the only reason to love FunBites. These are kid safe. Designed to be safe enough for them to use without cutting themselves. You can get them to help prepare their own food, which makes eating without fussing much more likely. Put everything into bite sizes. Little fingers go to little mouths, so let's make it easier for them eat and less likely they will be cramming too much in at once. Plus, this way they can try many other things in just the right size.

Desperate times calls for creative recipes!

Flashbacks of living in a hotel with 3 kids for 4 months, while eating ramen and peanut better sandwiches every day have begun to hit me. Its been about 4 weeks since I lost my job. I only just received my final check from my last employer. Received one weeks payment from Unemployment. And Food Stamps won't reload with money until the 11th of this month. So I've had to get very creative with what we get from WIC and a few dollars well spent. From these hard times, I've created quite the magnificent dinner. My fiancé has dubbed it, Emily's Frankenstein. My kids ate it up. I'll share it with you, and I want to know what your family thinks about it. Enjoy!
Emily's Frankenstein

Double batch of 6 serving boxed mashed potatoes or the equivalent of what your family would eat
Pepperoni (however many your family would deem enough)
Canned corn (just half was enough)
onion, bell pepper, green onion to your taste
Half a package of cream cheese
Salt, pepper, garlic (or whatever seasonings your family likes)
2 cups of shredded cheese
Make your pot of mashed potatoes. Sauté the pepperoni (and/or sausage works), onion, bell pepper, garlic. Mix that, the cream cheese, and canned corn (I only used half a can as some of my kids don't like too much of it) with the mashed potatoes. Add your seasonings. Spread into your greased baking dish, sprinkle the top with cheese, and cover with aluminum foil.
Bake at 350 degrees for about 20 minutes. You really just want the cheese melted and everything warmed up.

Serve with green beans on the side if you like. Especially if you have several cans in .the pantry... Its simple, its quick, its fairly cheap. And our whole family loved it!

Gardening is good for the soul

Gardening is good for the body too. You grow healthier foods, maybe beautiful flowers, or trees for some summer time shade. Whatever it is, it has purpose in the long run.
For my family, we are growing vegetables. One - to save money. Two - to eat healthier. I'm also having my daughter help in growing flowers. She loves to pick wildflowers everywhere we go. Do you have one of those kids in your life? The one you hear, "This is for you, Mommy!", as she hands you a wilted flower that has tiny black insects in the middle? You reach down and say, "Aw, thank you, sweetie." Then when she isn't looking, the flower finds a new home in the grass...
But the excitement we have while working together as a family, is what is truly important to me. We spend so much time as moms, or dads, that we miss moments with our kids. How often do you find yourself saying, "Oh? That sounds cool." Or, "Really? Well, just be careful." Were you really listening to them? Can you repeat their story back to them? Or did you get the gist and mumble your reply while focusing on your current task. Watching TV, washing dishes, folding laundry... Yes, these are important and must be completed. Yes, time is limited. But they won't be little forever. Before you know it, your baby is 8 years old. He has an attitude and doesn't want to stand next to you when his friends are there. Your little girl is 4 years old and wants to pick out her own clothing for school. And your 6 year old can do his homework without your help, but let's you "help" by reading the instructions just to spend that time with you.

Bubba's 33 restaurant review

This past weekend, we were out running errands and decided to stop in for lunch. Bubba's 33 has just opened off the IH35 and Pat Booker exit. Its on the corner near the Forum. They boast Pizza, Burgers and Beer at this sports bar-type place. Wall-to-wall TV screens are all playing sports channels (except the one playing music videos). The music is more of the classics and country from the 70's to present. Not as kid friendly as I'd hoped. It is loud like Buffalo Wild Wings or Hooters. A little hard to hear each other.
For their first Sunday, they were stretched pretty thin. You'd think they would have had more people on hand. A new restaurant near the Forum? On the weekend? Yes, that should be a no brainer that it will be busy....
I'm giving grace to the waitress we had originally. She was in training that day. Our actual waiter was constantly running, but at least checked in. We just had a little longer wait than I think would be normal.
About the food... We ordered the onion ring appetizer.
They were really good. Fluffy and fresh! And I really loved the Bubba Sauce that came with them. I ordered the Bubba Bacon Burger.
Sadly, it wasn't well done all the way through. The edges were crispy and everything on it was fresh and good. Just could've cooked a little longer. 
My fiance enjoyed his 12" Meaty Meaty pizza.
A little too much pizza for me, but well cooked. His drinks weren't he greatest though. His tea was more like water, sugar and a slight hint of tea. Very watered down. He ended up asking for a strawberry lemonade. The first one was fine. His refill, however, was the strawberry lemonade and they added something carbonated. Almost like she accidentally started to put in Sprite and remembered what he really wanted and then added that? 
My daughter wiped out her mac-n-cheese, my oldest devoured his cheeseburger and my middle child loved his cheese pizza.
Just be careful of the kiddos with the shoestring french fries. 
They also advertise a free pizza for joining in their MVP program.
Could be fun for an adults-only outing. Just pick a better time when they have enough staff and attention can be paid to your service.

Light but tasty snack ideas

Sometimes you want something to snack on that might not be the healthiest, but its just oh so good! One that I like doing is bacon wrapped, cheese smothered tater tots. Simple to make, takes only 3 ingredients… how can it get better than that?

What you need:
Bag of frozen tater tots

1 package of your favorite bacon (turkey doesn’t work too well for this one)
1 package of cheese (any of your favorite kinds)  

I like to deviate from the way I’ve seen them made online. I own a deep fryer, so I fry some tater tots first. Don’t need to crisp them too much though! Then you will want to let those sit on a napkin while you prep your next step. I cut my bacon strips in half. Get out that baking sheet and preheat your oven to 375. I cover mine in aluminum foil and spray it lightly with cooking spray. This helps to keep it from sticking too badly.
Grab one of the bacon strips, wrap up the tater tot, and place it on the baking sheet. Repeat this step with the rest of your bacon and tater tots until you have the desired amount. Bake for about 10 minutes. Then add your cheese and bake again for another 10 or so minutes. You want the bacon to be cooked and the cheese to be completely melted around your tots. You can make as much or as little as you want, based on how many people you are serving. I've also added chili to it and then covered it with cheese.
Another recipe I love is Doritos Nachos.
You know how Taco Bell has those tacos in the shells with Doritos flavoring? Well, you can pull that off with nachos as well.
What you need:
Your favorite Doritos chips (I use the HEB brand of them sometimes)
Cheese
ground beef
salsa
First thing you want to do is get that baking sheet ready. Preheat your oven to 375. Spread your favorite tortilla chips on it.
You can then top it with your favorite nachos ingredients such as ground beef, cheese, etc.
Bake for about 8-10 minutes or until the cheese is all melted.
At my house, the kids like when I pour the Taco Bell sauce over them and then serve. You can use your favorite sauce and sour cream as well.


And lastly, I made bacon and cheese crescent rolls. I took a can of Pillsbury Crescent Rolls, some bacon strips cut in half, and cheese that I sliced into strips and rolled them up together.
Bake at 350 for about 10 minutes until they are golden brown. You can use any kind of cheese and your favorite bacon. Or you can switch it out for pepperoni or sliced deli meats.

Columbia restaurant review

Aesthetics were inviting. But that's the deceiving part. They draw you in with friendly staff that delivers a highly professional attitude. As you gaze at the beautiful layout and designs, you take in a clean atmosphere that fools you into feeling comfortable. They play classic Spanish or Columbian music that isn't overwhelming. 

We were seated promptly right off the street. The waiter prepped our 4 seat table for 3. We all ordered water. When he brought our glasses back, 2 of the 3 water glasses had to be sent back. Some of the silverware had a film or other contaminates on them. Thankfully, we decided to order sandwiches. Instead we should've just left. The prices in the menu make you think you're getting a higher quality. But that's just another deception on their part. The best part of being there was the bread.
Before serving your meal, they bring you fresh bread and butter. The bread is flaky on the outside with a warm and soft inside that was oh so tasty. It's the perfect way to start, particularly when you're famished from the heat waves outdoors. And especially when you have to wait something over 15 minutes for your SANDWICH. I mean honestly... I can make a gourmet sandwich in less than 2 minutes. They didn't have to cook anything. And they weren't that busy. Was there only one cook? That's the only thing I can think of. And if that's the case, what idiots! It's spring break vacation and late lunch time. On one of the most popular tour sites no less. We were down St. George Street. 
Other things to take notice of, most of their dishes are seafood. Everything was very pricey. Our sandwiches were in the $10-15 range. 

The sandwiches were good. Nothing spectacular. I liked the plantain chips they served with them. A healthier and unique side dish that keeps the meal light. 
The waiter had to be flagged down when we needed something. He gave us someone else's check as well. My sisters trick of draining your glass to get service didn't even work there. 
I found their website. 
I find it interesting that they require you to be classy enough to not wear sleeveless when you're a guy. In this heat, it could be appreciated by other patrons. 
I'm still disappointed. I don't feel that this is a place I'd want to refer loved ones to. Nor will I feel inclined to return to it. With so many options on George, no one needs to suffer through the same disappointment twice.

Wise Company food review and emergency preparedness

I recently requested a sample from the Wise Company of emergency food storage. The Wise Company specializes in emergency prepared foods that can be stored for extended periods of time.  Have you ever seen Doomsday Preppers? Have you ever considered the possibility that some kind of emergency might arise causing you to rely solely on what you have stored at home?
I know I have. I've been living in a state where hurricane parties are normal and anything less than a category 4 isn't worth worrying about. I've filled up Rubbermaid bins with water, kept a first aid kit in all my vehicles (even my motorcycle), and also try to keep things in the pantry for emergencies.
Food is always one of the most important things to have on hand in case of emergency. There have been many times when the power goes out and canned beans become the main part of your diet. Let’s face it though; you really don't want to be cooped up in a home with everyone eating baked beans morning, noon and night. The smell gets so bad you might just brave the storm outside instead.

Wise Company sent me a pack of Chili Macaroni that feeds up to four adults. It's 100% vegetarian. You just need to boil 4 cups of water, add the contents in the package and stir. After turning off the heat, cover it and let it stand 12-15 minutes while stirring occasionally. Let it cool and dig in!

Now, to be perfectly honest, it’s not the greatest chili macaroni I’ve ever had. (I much prefer my home cooked kind.) But when it’s an emergency, this would be the best thing ever for dinner! Food is always on the top of lists during an emergency, so be prepared with something that won’t require a lot of attention or things that go bad without refrigeration. Better than beans and better than MRE's, which I've also had a taste of before. However, while it might taste better than your other options, its still on the bland side so have some hot sauce at the ready. Texture is flat too.
Cooking Wise Company...

My husband brought up a valid point about how you would heat such a food without electricity? Well, if you have a grill, a pot of water over the charcoals or fire wouldn’t hurt to heat this up. Also, most people around here invest in generators. For people with those, voila! Electricity at your disposal. But only for a limited amount of time until you get it recharged for use. And lastly, option three would be a camp fire. Just remember to keep loose brush, leaves, or other debris away from it. Last thing you want is to start a wild fire and cause more damage.

My cheesy pasta and beef casserole recipe

The other night I found myself standing in front the pantry surveying what groceries I had left. In the refrigerator, I had a pound of ground beef thawed out. So I was now trying to decide what to cook with it. I came up with the following and it pleased even my pickiest of eaters. Enjoy!

What you will need:
1 package of pasta (I used penne)
2 cans cream of celery
1 lb ground beef
Chopped onion (however much your family likes)
Garlic salt and herbs of your choice
About a half of a block of cheese shredded
1 can of mixed vegetables
Cook and drain the pasta as well as the ground beef. Spray 13 x 9 inch pan. Combine pasta, ground beef, cream of celery, chopped onion, vegetables, and some of the cheese in the pan. Sprinkle the garlic salt and herbs on top. Spread remaining cheese over all. Cover with aluminum foil and bake in the oven on 400 for about 20 minutes or so until the cheese is completely melted and everything is hot.

I’d normally add bell peppers and chopped tomato as well, but I didn’t have any on hand.

Journey Bar new flavors review

Journey Bars are amazing! I did a review on them quite a while back. After that initial tasting I've since kept in touch with Marguarette, the co-founder of Journey Bar. She recently contacted me about the new flavors they have added to the collection as well as some great changes they made to a favorite. The new flavors are Sea Salt and Sesame Ginger.
I thought the Sea Salt one was pretty good. Its chewy, tastes lightly of sea salt with the grainy flavor of the quinoa and amaranth.The Rosemary still tastes wonderful but now comes in chewy goodness.
I shared the latest ones with my mom to get some variety in the opinions, though, we often enjoy the same things. Here's what she had to say about them:
The Rosemary was good. I like it soft. It allows us old folks to chew it. I like the taste just as I did before. It is nice that it isn't full of sugar. When I eat a lot of sweet things it makes me wanna keep eating which is bad for my weight. I tried the Sea Salt one. Not bad. I still like the Rosemary one best. The Sesame Ginger has a much milder flavor than the Rosemary. It is good. Not too sweet and doesn't taste like cardboard. I could eat it. I am going to eat them as a meal replacement bar. Thanks for sharing them.
All of the bars are chewy, gluten-free, vegan, with added protein. I plan to get more and use them as my work meals. It saves money (even more so than normal brown bag lunches would). One of these bars and my reusable water cup keeps me energized and satisfied. And it would amount to about $2 for my lunch!

There's another website (Drugstore.com) that sells them 12 for $18. That's a real deal on a healthy meal for someone on the go!
If you are out and about, you don't neccessarily want something sweet, sticky and messy. Sweets can make you hungry for more which adds pounds, sticky messes get everywhere and require wipes or a stop to wash hands. That's where savory, flavorful bars have their competitors beat. RW Garcia review and giveaway

Time for another great food review! Good thing I'm trying a lot of healthy things or I'd probably spend all my time at the gym... This time I was sent chips from RW Garcia. You can check out their website hereThey offer quite a variety of wholesome quality tortilla chips. We like tortilla chips for making nachos, eating with salsa or dip and for when we have parties!
These happen to be great in several ways. First, they are gluten-free. So if you have Celiac disease (which seems to be more common these days) or if you have allergies to wheat products these make a great alternative snack option. They are a healthier alternative to other tortilla chips that are loaded with highly fattening powdered flavoring. The taste is more baked into them than onto them.

They sent me 7 bags to try: MixtBag of Red and Yellow Tortilla chips, MixtBag of Yellow and Blue Corn Tortilla chips, 3 Seed Veggie Dippers, 3 Seed Blue Corn Dippers, 3 Seed English Cheddar Dippers, 3 Seed Curry and Mango Dippers, and 3 Seed Savory Dippers.
The MixtBags are a great hit in my family. My boys and husband especially love tortilla chips. We make nachos and dips or just snack on them out of the bag. The kids really love the different colors. It makes them fun and a great way to jazz up party dishes.
Another favorite of my kids and I in particular (and my siblings/mom) was the 3 Seed Veggie Dippers. They come as a mixed bag that has 3 flavors inside; Spinach and Garlic, Red Beet and Onion, Carrot, Tomato and Sesame.
Spinach and Garlic is of course green. The garlic isn't overpowering and neither is the spinach. They actually blend nicely. It has a taste to it that I find hard to put words for... So I'm just going to say it's not spinach-y. (Yes, I'm making up words!)
Then we come to the Red Beet and Onion Dippers - which I really enjoyed although they have a sort of vegetable after taste. You can taste the beet and onion in harmony together. My kids just liked them being red.
Lastly the Carrot, Tomato, and Sesame Dippers were really nice. You just slightly taste the carrots. The tomato was stronger in a good way.


3 Seed Savory Dippers are Himalayan Pink Salt and Cracked Pepper. Whether standing alone or dipping - the flavor is satisfying! Not overloaded with salt.
The 3 Seed English Cheddar ones are lightly flavored and were highly popular among the kids.
3 Seed Curry and Mango were definitely the strongest flavored chips by far! Word to the wise: If you can't handle some tangy spice, stay away! Eat more, feel the heat take it up a notch. The curry is most decidedly strong with this one. You can barely taste the mango. However, I actually like curry so this one was a pleasant surprise for me. Curry is an acquired taste, in my opinion. You either like it, possibly grow to like after being made to try it more than once, or you will never like it.
So what else can I tell you about these great chips? Let's see... the texture is really awesome and sturdy. They can handle heavier dips like guacamole. You can read the ingredients on the package without a "What the heck is that?!".
They also have recipes on their website. They tell you which stores offer their products or how you can order them online.
